Flaky Pizza Roll with Sweet & Spicy Italian Beef Sausage

Ingredients
Sausage
1 lb (454 g) – Ground Beef, Lean
1 ¼ tsp (6 g) – Salt, kosher
1 tsp (2 ¼ g) – Garlic Powder
1 tsp (2.5 g) – Fennel Seeds, toasted
¼ tsp (0.6 g) – Chili Flakes
½ tsp (1 g) – Paprika
1 tsp (1 g) – Oregano
½ tsp (1.5 g) – Onion Powder
½ tsp (0.6 g) – Black Pepper, ground
1/8 tsp (0.25 g) – Smoked Paprika
¼ tsp (0.4 g) – Coriander, ground
1 Tbsp (25 g) – Maple Syrup
¼ tsp (0.6 g) – Cayenne, ground
Pizza Rolls
2 Sheets (400 g) – Puff Pastry, thawed
3 Tbsp (45 g) – Pizza Sauce, canned
3 Tbsp (20 g) – Onion, diced and cooked
4 Tbsp (40 g) – Green Pepper, chopped and sauteed
2 Tbsp (20 g) – Mushrooms, sliced and sauteed
½ Cup (60 g) – Sweet and Spicy Italien Beef Sausage, cooked
2/3 Cup (90 g) – Mozzarella Cheese, grated
Method
Sausage
In the bowl of a stand mixer fitted with paddle attachment, add all sausage ingredients,
and mix on medium low until fully incorporated.
Brown sausage in a large pan over medium high heat until cooked through. Strain
excess fat and set aside.
Pizza Roll
Lay puff pastry out on a lightly floured surface.
Spoon half of the pizza sauce on bottom half of the pastry, leaving about ½” around the
edge as room to pinch closed at the end.
Layer half of all the toppings on top of the pizza sauce.
Create slits in the top half of the pastry to act as vents.
Pull pastry closed and seal the edges with a fork.
Whisk one egg until no longer streaky to create an egg wash. Lightly brush top of pastry
with the egg wash.
Repeat with remaining ingredients.
Lightly salt top of pastry, and place on a parchment lined sheet pan and bake at 375 F for 20 minutes.
