Turkey Turmeric Power Bowl

Ingredients
Seasoning
1 tbsp each turmeric, paprika & curry powder
½ tsp garlic powder
1 tsp seasoning salt
Turkey
2 tbsp canola oil
1 small onion, diced
1 lb ground turkey
1 can chickpeas, drained & rinsed
Couscous
1 ¼ cup water
1 cup couscous
2 tbsp raisins
1 tbsp of the seasoning mix (above)
Sauce
1 tbsp seasoning mix (above)
1 cup plain yogurt
1 tbsp lime juice
1 tsp siracha (optional)
½ tsp white sugar
1 tbsp chopped fresh mint (optional)
Veggies
2 carrots, diced
1 celery rib, diced
1 bell pepper, diced
1 handful cilantro, chopped
Method
Whisk together ingredients for seasoning mix and set aside.
Heat a large frying pan on medium and cook the onion and ground turkey in the canola oil. Break up the turkey into small pieces as it cooks.
When there’s no pink left, mix in the chickpeas and 1 ½ tbsp seasoning mix and let cook for 5 minutes.
In a small pot, bring 1 ¼ cups of water to a boil. Add 1 tbsp seasoning mix, raisins and couscous.
Remove from heat immediately and cover with lid.
Whisk together all ingredients for sauce.
Prepare vegetables.
Assemble bowl – start with couscous add some turkey/chickpea mixture, vegetables and a scoop of sauce on top.
