BBQ Turkey Sandwich with Apple Slaw

Ingredients
1.5 lb turkey fillets
6-8 Kaiser or Brioche Buns
Rub
2 tbsp brown sugar
1 tbsp paprika
1 tsp seasoning salt
1 tsp garlic powder
1 tsp black pepper
½ tsp onion powder
¼ tsp (or dash) cayenne (optional)
Slaw Dressing
2 tbsp honey
2 tbsp honey mustard
2 tbsp canola oil
¼ cup cider vinegar
1 tsp garlic powder
1 tsp salt
Coleslaw
1 bag coleslaw mix (397g or 6 cups)
½ Granny Smith apple, diced
3 green onions, chopped
Method
Whisk together all rub ingredients.
Sprinkle rub over turkey breast, on all sides. Let sit for 10-15 minutes.
Meanwhile, in a medium size mixing bowl whisk together all slaw dressing ingredients.
Mix coleslaw ingredients into dressing. Cover and refrigerate.
Heat barbecue to medium heat.
Spray or brush grill with oil.
Place turkey breast on grill. After about 10 minutes, turn over and cook until internal temperature reaches 165 degrees F.
Once internal temperature is reached, remove from grill, cover with tin foil and let rest for 10 minutes.
Slice thinly, against the grain.
Assemble sandwich with turkey, coleslaw and your favourite toppings (ie. mayo, mustard, onions, jalapenos, etc.).
